Guiltless Oven-Fried Chicken Fingers

1 cup low-fat mayonnaise
1 tablespoon curry paste, or more
Kosher salt
Freshly ground black pepper
4 skinless, boneless chicken breasts
2 cups panko (Japanese) bread crumbs
Heat the oven to 350 degrees F.
In a large bowl, combine the mayonnaise and curry paste, to taste. Thin this with a little water, 1 tablespoon at a time, until you get the consistency of heavy cream, and season with salt and pepper.
Cut the chicken breasts into thick strips. Drop the strips into the bowl and coat them well with the curry mayonnaise. Cover and refrigerate for at least 5 minutes or up to 1 hour.
Pour the bread crumbs onto a plate and toss the chicken strips well to completely cover them. Put them onto a nonstick baking sheet and into the
oven. Cook for 15 to 20 minutes, or until the chicken is browned and cooked through.
Oven-Fried Potato Wedges

3 large baking potatoes
1/2 cup mayonnaise
1/2 teaspoon hot sauce
1/4 teaspoon onion salt
1/2 teaspoon House Seasoning, recipe follows
1/8 teaspoon black pepper
2 cups cornbread dressing mix
Preheat the oven to 375 degrees F.
Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the dressing mix. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
Oven Fried Chicken

Oven-Fried Potatoes

3 medium russet potatoes, about 1 1/2 pounds, scrubbed and dried
3 tablespoons extra-virgin olive oil or a neutral tasting oil

Preheat the oven to 450 degrees F.
Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren’t touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
Transfer potatoes to a serving dish and serve immediately.
Oven Fried Catfish

8 fillets boneless catfish
2 cups milk
3 1/2 cups white cornmeal
3 1/2 cups yellow cornmeal, coarser grind
1 teaspoon salt
1 teaspoon red pepper
1 teaspoon black pepper
4 tablespoons granulated garlic
4 tablespoons thyme, dried
Cajun seasoning
1/4 cup melted butter or butter cooking spray
Tartar sauce, optional
Soak catfish in milk for approximately 1 hour, in the refrigerator. In a bowl, mix together white and yellow cornmeal. Spice up the cornmeal with salt, red and black pepper, granulated garlic, thyme, and Cajun seasoning, to taste.
Preheat oven to 400 degrees F.
Take the fish out of the milk and shake off the excess milk. Dip the fish fillets in the spiced cornmeal mixture. Put the fillets on a buttered cookie sheet and drizzle butter over the fish. Or you can use a butter spray. Bake fish in oven for approximately 10 minutes. Time may vary depending on the thickness of fillet. Fish should get a nice crusty, golden color. Serve with tartar sauce.
Oven-Fried Potato and Sweet Potato Chips with Creamy Oven-Cooked Bacon Dip

1/4 cup olive oil
1 (6 to 8-ounce)medium Idaho potato
1 (6 to 8-ounce) medium sweet potato, peeled
1 teaspoon kosher salt
1 teaspoon finely chopped rosemary
1 teaspoon very finely grated lemon zest
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1 teaspoon very finely grated orange zest
1 teaspoon sugar
1/8 teaspoon grated nutmeg
1/8 teaspoon ground ginger
Creamy Oven-Cooked Bacon Dip, recipe follows
Preheat the oven to 400 degrees F. Using a pastry brush, lightly grease 2 large baking sheets with 1 teaspoon of oil each and set aside.
Using a mandoline slicer, or heavy, sharp knife, cut the potatoes and sweet potatoes as thinly as possible. On 1 baking sheet, arrange the cut potatoes in 1 layer. On the second sheet, arrange the cut sweet potatoes in 1 layer. With a pastry brush, lightly coat the top side of both potatoes with the olive oil. Bake until golden and crisp, rotating the pans halfway through the cooking time, about 10 minutes. Remove from the oven.
While the potatoes are cooking, In a small bowl, combine the salt, rosemary, lemon zest, and black pepper.
In another bowl, combine the cinnamon, orange zest, sugar, nutmeg, and ginger.
Remove the potatoes from the oven and transfer to paper towels. While still warm, sprinkle the potatoes with the lemon salt mixture, and the sweet potatoes with the cinnamon mixture. Serve warm or at room temperature with the Creamy Oven Cooked Bacon Dip.
Creamy Oven-Cooked Bacon Dip:
8 slices bacon
6 ounces cream cheese
1/2 cup sour cream
1/4 cup plus 1 tablespoon chopped fresh chives
2 tablespoons prepared horseradish
1/2 teaspoon fresh lemon juice
1/4 teaspoon salt
Hot pepper sauce, to taste
Preheat the oven to 350 degrees F.
Arrange the bacon in a layer on a broiler rack set over the broiler pan. Bake until crisp and brown, 15 to 20 minutes. Remove from the oven and drain on paper towels. When cool enough to handle, crumble or chop into small pieces.
In a bowl, cream together the remaining ingredients. Add the crumbled bacon and mix. Cover and refrigerate until chilled, about 1 hour.
Serve with the oven baked potato chips.
Yield: about 1 1/2 cups
Oven-Fried Onion Rings

1/2 cup well-shaken low-fat buttermilk
1/4 cup all-purpose flour, plus 1 cup for dredging

1 large red onion (12 ounces), cut crosswise into 1/3-inch thick slices

Preheat oven to 450 degrees F.
Whisk together egg whites, buttermilk, flour, salt, and cayenne in a shallow bowl until smooth.
Separate onion slices into rings and pick out the 12 largest, reserving remainder for another use.
Heat 1-inch of oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 4, dredge onions in flour and dip rings into batter, letting excess drip off, then cook in skillet until golden brown, about 1 minute on each side. Transfer rings as browned to a lightly oiled, shallow (1-inch deep) baking pan.
Bake rings in middle of oven, turning once, until crisp and deep golden, 12 to 15 minutes total.
Oven Fried Chicken Breast

4 skinless boneless chicken breast halves (about 1 1/2 pounds total)
Preheat oven to 450 degrees and line a baking sheet with foil. Tear bread into pieces and in a
food processor pulse until finely ground. In a large bowl stir together 2 cups bread - crumbs, Parmesan, sage, and salt pepper to taste. Melt butter, add salt and pepper to taste. Pat chicken dry and brush all over with mustard mixture. Roll chicken in bread-crumb mixture, pressing gently to adhere, and arrange chicken, without crowding, on baking sheet. Drizzle with butter.Bake chicken in middle of oven until cooked through and golden, 25 to 30 minutes.Share and Enjoy.
